I think the over-the-nose view (which I use also for snapshots, etc.) isn't realistic in the manner that you or I use it.
If you're following an NME through a moderate to high G turn, pull on the stick more and then try to stand up to see over the nose--that's just not realistic. And yes, in planes like the F6, Tiffy, FM2, P-47, and Hurricane, that kind of view over the nose would require almost standing in the cockpit (or some sort of input from your legs) to put your head on the top of the canopy.
I don't like it either, but I've always thought that kind of view was a bit unrealistic.
