I figured out how to do this just messing around one day trying to duplicate an outstanding meal I had at a Japanese bar, and its sooo good, I have to share it:
Ingrediants:
salmon steak
cukes or carrots chopped lengthwise into twigs
cold cream cheese
sesame seeds
nori
soy sauce
wasabi
pickled ginger
unagi sauce (the dark sweet one)
hot chili oil

Put salmon steak in the microwave for one minute. Take it out and carefully remove the skin. Continue to cook until done.
Use kitchen sissors to cut the salmon skin into strips. Sprinkle some hot chili oil in a small skillet and fry the skin on high heat until it is very crispy. Set aside.
Take a nori sheet, put it on a plate and sprinkle soy sauce on it until it is the consistancy of latex, but not too wet.
Arrange hot salmon pieces along an edge of the nori. Nest the crunchy cuke twigs along side the salmon. Lay a long strip of hot, crispy salmon skin alongside cucumber. Quickly lay a line of cold cream cheese on top of the other ingredients, sprinkle with sesame seed, give it a squirt of sweet unagi sauce and roll it up.
You don't have to slice crosswise if you don't want. I just dip it in wasabi and eat with pickled ginger.
Yes, its a little bit fussy to make, but mmmmm goood.
