Not saying that these courses might have existed for a single semester. In grad school there are some very unusual courses offered at most universities. They last for a semester and allow the prof to use students who sign up for the class (usually at the prof's request) to help with research for an academic paper. These courses are not usually available to undergrads and frequently are only available to doctoral students and certain masters students by invitation.
I would bet that's the case with the Princeton and Johns Hopkins courses.
On the other hand, the Oxy course does not surprise me. That is a very liberal college. Seeing that kind of course (and one they have called "Stupidity" as part of Religious Studies program) is no more surprising as finding a course at Bob Jones University in the School of Teacher Education called "A Culture in Crisis: reclaiming the Arts from the current moral decadence prevalent in today’s culture," or that Oral Roberts University has a course that teaches you how to be a faith healer called "Charismatic Life and the Healing Ministry."
