It depends on the lighting conditions. If its balls out bright sunlight that is behind me, I can shoot in auto-sport mode, otherwise I go to shutter speed priority, and pre-set the ISO if its cloudy or raining. I also play with the exposure value prior to shooting to prevent over/under exposure, which you must do in manual mode.
If you shoot action photography, you never want to do aperture priority if its cloudy / rainy or indoors as your photos will come out blurry.
