South Beach is a good place for night life, walking around, people watching, the beach.

Seminole Hard Rock Casino for gambling, some shows.  You will just miss Championship Boxing and Wayne Newton (maybe that is a good thing)

I would not miss Little Havana around 8th Street for great Cuban food.  You missed the Calle Ocho Festival...

maybe Miami-Dade Metro Zoo

diving/snorkling

fly over to Bimini for a day

maybe charter boat for a half or full day for deep sea fishing

might be something going on at the convention center

the convention center is on 17th street, walking distance to south beach which is considered to be from 10th street on the north end.  most of the hotels in that area are ancient art-deco that have been remodelled, some tastefully while others would make eagler feel right at home.

I would recommend taking a cab or super shuttle from the airport to the hotel and back.  there are some neighborhoods between the airport and the beach that you definitely do not want to wander into.

If you are only going to be in town for a few days you will find all you need right on south beach.  I hope you aren't offended by trim bodies on a beach where clothing is optional.

you'll find cuban on 8th street and in little havana but I wouldn't categorize it as great.  the best cuban food is found in hialeah.  you'll find little havana quality cuban food on south beach. arguably the best cuban restaurant with traditional cooking and seasoning is casa romeu and they have three locations but the one that is still owned by the romeu family is actually in the town of southwest ranches in a shopping center just west of I-75 on the sheridan street exit.  that is in my opinion the best place to enjoy a traditional style cuban meal.
