Hit escape to bring up the clip board. Select options then preferences and then flight.
This will bring up a window. Make sure there is an X in the auto take-off box. If there isn't, click on it to select it. Click apply and then go back and try launching a plane.
You will see green text in fromt of you when you hit the runway that says "auto takeoff enabled".
Now, DO NOT move any control on your stick except the throttle and views. If you move the ailerons or elevators it will disable auto take off.
Push your throttle fwd to full throttle and let the aircraft take off unassisted. Once you have about 160 mph or so you can take over control simply by moving the stick.
Get level and let the plane build speed. 160 mph is pretty close to best climb speed, but if you try to horse the nose higher you may stall when that slow.
Speed is the name of the game. Get fast first. Then you will be able to experiment with flying and maneuvering in flight.
There is a pretty steep learning curve here.
Also, Schatzi is bang on with her explanation of what is happening to you and why your ailerons are set as they are when you are taking off. Torque is a pretty big issue, and you will find some planes are much torque-ier than others here as well.
