Lamb Chops
« on: March 30, 2007, 05:13:40 PM »
I love to eat lamb chops, however, I have never personally grilled them....Tomorrow I will be going to a barbacue, and I will be bringing chops with me...(they are the small ones, one the bone)...

Anyways, I'd like to advice on how to prepare?  Marinade?  Rubs?  Sauces etc....How do I do this?

Thanks

The first thing to do is to toss them out, and chide yourself for being so stupid as to buy something small for a high price.  You're from america, grow a pair of cajones.

Then buy the REAL lamb chops.  They'll be called either "Shoulder Chops" or "Arm (Bone) Chops."  You should be able to get them for roughly 3-3.50 a pound, better then any other meat you can find.

Once you do that, my favorite is just a garlic seasoning on the outside as you grill them.

Marinade them in Terryaki sauce, red wine, pepper, salt and garlic..for about 4 hours...they'll be beatiful.

I like a couple of chillis too but that's a matter of taste.

Sauce to accompany once off the grill. Olive oil, honey, white wine vinegar (dash), freshly chopped basil.  Salt, pepper to taste.  Good stuff.
