Falcon4: AF has some easy modes. 360 radar and all that. I didn't bother. I just stuck it on max realism and started playing. Occasionally I'd have to pause a game and lookup how to use a weapon system.. and sometimes I still get lost in the MFDs...

but, when all else fails, hit your dogfight switch.

Sincraft take a look at Strike Fighters Project One/Wings Over Vietnam/ Wings Over Europe These are pretty good jet sims with a lot of add on aircraft, and campaigns. There's a pretty good sized community and on-line play as well.
