Tortillas are no more important to the Mexicans than bread is to the Russians. You take any staple food away from folks who already have very little and you are going to get a problem.

If I knew how to make them from scratch, I'd be queen of the house for sure. Alas, I have to buy them, since I always hose it up somehow.

tip:
know the difference between baking powder and baking soda. they are not the same and switching one for the other can make a nasty tasting gagging something.

thats for sure, and not only for tortillas.  One day several (many many moons) years ago I was whipping up some pancakes for breakfast.  Mixed it all up, heat up the griddle, pour on the pancakes.  Pretty soon I'm smelling something that smells like burning hair... yew...  where could that smell be comin from... wife comes strollin into the kitchen, whats that smell??!  I check out the pancakes,  OMG they stink.... why?:confused: ,  look at the counter and see the box of baking soda,...:eek:  never made that mistake again...:cool:

Tortillas

serving size

Makes 8 large tortillas...or 12 smaller ones

ingredients

4 cups all-purpose flour (or 3 cups all-purpose and 1 cup whole wheat)
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup canola oil
1 1/2 cups warm water (or enough to make the dough the right consistency) preparation
In a large mixing bowl, combine all of the ingredients and 1/2 of the water. Mix together with your hands and continue adding water into the dough until it forms a solid ball, but is not too sticky. If necessary, add additional flour or water as needed. Knead the dough on a floured board for 5 minutes. Cut the dough in half and then in half again, continuing the process until you have 8 equal portions. Roll each piece into a ball, place them on a lightly floured surface, and cover with a damp towel.
Heat a griddle or cast iron pan to medium heat. Roll out the dough, one piece at a time to about 1/4 inch thickness. Place one round of dough on the griddle and cook on each side for about 30 seconds. Take care that the griddle is not too hot or the tortillas will scorch. Continue the process with the remaining 7 portions of dough.

Give yourself a couple of times making these and you will be a PRO in no time!

Rox,

That's the recipe for gorditas, not the regular thin flour tortillas. The thin ones are way thinner than a 1/4 inch. The recipe you have is more like fry bread, another good thing to eat. ;)

For the thin tortillas they are stretched by hand until they are almost translucent then very quickly cooked on a very hot cast iron griddle. It's hotter than would be used for pancakes. They are also made with lard, flour and just a touch of salt.
