Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

The reason your plane goes nose down when your horizontal stabiliser is shot off is because it balances the twisting moment of the wing,  as the centre of lift usually sits behind the centre of gravity.
