I watched his show where he straightens chefs. Its was the one with the French chef, pretty damn good show. Pulled me in for the whole hour.

That's so beautiful... I love how he doesn't talk bulls**it about anything.  Shallots. Butter. Filet.  It's just ingredients.  From a culinary standpoint, it's brilliant.  You know damn well how it all should come together.  That is.. if ya know. ;) That near to last line sums it up.
