Helmets would be pretty useless; even if it stopped the zombie from getting to your head, if it bit you anywhere else you'd still die and become zombified.  It might give you protection against a surprise bite, but not much after that.

problem with butchering anything is not how to do it...  you can mess up pretty bad and still have more meat than you can use with big animals like a pig or cow or even a deer.. problem is storage.   no refrigeration means jerky lots of salt.

If you are in a group that is a little different but in any group someone will have basic butchering skills.

Watched land of the dead this weekend http://en.wikipedia.org/wiki/Land_of_the_Dead these Stenches began to organize. I don't think you could carry enough rounds to out last the zombies, you need a head shoot to take one down. With a good scope you may get the first few dozen, but you would be over run eventually.

Your best hope would be to get to a safe place. Zombies can cross rivers, lakes etc. I  would go to a  high place that requires technical climbing skills to access. This  would be your best bet. But, at high altitudes your food supply would be limited to a short growing season.
