Editing offline missions?

I notice you can open the .MIS files with notepad.

It is possible to copy the file and create additional missions,

But I would leave it alone, hopefully at somepoint they might give us a tool to create them...

How did you do that? I did the P-51 mission like 10 times and it was really easy. I want to try other planes.

did you change the ACTUAL aircraft you fly?

I tried changing the names in the file, but still ended up in the 51D

Yeah I'd like to know too how you did that, if you were able to just change the name, or if you actually were able to put the A.I in another aircraft.

Yes.  You can change the aircraft, number of aircraft flying, and a number of other things.  I don't know (yet) if you can tweak the relative skill of the enemy (probably).  Given I'd rather not annoy Pyro I don't plan to post instructions...but I've always preferred editing files to using GUIs.
