Is there any way of setting the vehicle to brake and stop whilst in turret/pintle/hull views

Not that I'm aware of.
Benefits of having a two man crew I suppose. Same as in a bomber. One guy plays gunner and the other flies the plane.

But you can turn the gv while in the turret by using the rudder buttons.

Yea i tried set the rudder pedals as a break also, and it did not work
