Couple things in this
I'm curious as to whether or not there's a reason for this, as it seems to be rare in flight sims; there's almost never a pilot in the cockpit?
It's nothing you usually think about, but especially since the addition of shadows the cockpit seems really empty. It's weird seeing the cockpit frames on your wing with nothing in the cockpit. It's also a bit odd, to me, to have the phantom stick and rudder pedals moving with nothing touching them. Also to look back in the Ju88 and see two unmanned guns, or in the 110 etc. Has anyone from HTC ever considered putting a pilot 3D model in the cockpit even when you're in it?

Another thing is something I was thinking about was while I was waiting for FSO to start the other night. Everything's very still and dead. The ack guns move silently and without being manned. Ambience and activity adds to superficial immersion and realism and is pretty commonplace in modern games. It would be interesting to see little animated characters in the ack implacement, just screwing around when nothing's happening, and actively manning the guns when something is happening. Jeeps and cars running around the base from the tower to the hangars etc. would give a feeling of being at an active base rather than some kind of weird ghost town. Vehicles driving around the towns and new cities would also be interesting. Just to add a sense that you're 'somewhere' instead of in a video game

Ambient noises, nature sounds like birds chirping, waves crashing and such are also things that can be found pretty commonly in most games, and that ambient noise adds to immersion instead of constant dead silence. These aren't things people think about, and if done right wouldn't be noticed, but would add a 'feel' to the game

totally +1, the game feels like just a pile of polygons with no immersion. And don't give us the resource intensive answer.

I have wondered why we see the shadows of the canopy frame but no pilot.

Absolutely! There's nothing like having some guys to be around in the base.  Perhaps some pilots talking in the O'Club too. 

I noticed it too, flying away, it looked like someone had popped a neutron bomb (high rads, little boom) and not cleaned up.  The whole emptiness of the game frightens me at times.  So in conclusion, +1, we need something, albeit removeable in pieces, to add to the immersion of this World War Two simulation.

It's the seat.
Get in a plane without a 'head and shoulders' shaped armor plate, for example the 109, and you'll see that there is no shadow cast by the invisible pilot.

I would not mind a more detailed pilot because I have a system that could handle that but... consider the implications of your suggestion for just a moment.  :D

Small low detailed people with simple animation paths and like 10 sound files added to the game?

My computer can already keep track of and display several thousand fairly well detailed individuals with ambient noise created by probably higher quality sound files in real time, I can't imagine 40-50 would create much of a hit in Aces High.
Plus they wouldn't have to be fully rendered at a long range, you simply wouldn't see them even if they were after a while.

Well you are not taking into consideration that each movement is data shared over the internet connection we all fly on and that any additional data will only muck up the works.
