I would have to say the SE-5a, and then the Spad. I have flown the Nieuport and it is not that impressive. I enjoyed the SE-5 alot more fun it was all together a better flying plane.

The Spad is a must.. But the Nieuport 17 was one of the mainstays of the French Air Service.. They should both be added at some point..

and you would be right Ghost, along with the phalz III, but mostly the D III's, DVa"s and the DVII later in the war

I don't think they liked the Phalz 3 much, but your correct, they did fly them.
