I haven't the slightest idea.

So what is joystick scaling, What does it do, and How do you do it?

I found the options and I have no idea what to do with it.

basically if you have a non CH stick you will find that the imperfect controller will have sensitivity issues.  

Stick scaling allows you to lessen the impact of it by adjusting the 0-90 sliders.   If you want more aggressive controls raise them up higher.  

If you wish to make your stick less responsive keep the sliders low until the final 2-3 for maximim input.   You can see the raw and scaled sliders alongside one another in the blue box this will show you how the sliders are changing the amount of input on the axis.
