I had one of my best ideas to date.

My wife is not much of a baker so if there is anything I like that needs to be made from scratch then I have to make it myself. A couple of days I got to thinking that if pumpkin roll tastes so good with that nice cream cheese icing on the inside, then what would zucchini bread taste like if it were put in a cupcake wrapper and have cream cheese icing on top.

Well tonight I found out and WOW. My 11 year old daughter loved it so much she tried to stuff the whole thing in her mouth just to make sure no one took it from her (I guess).

For this test I only used the Duncan Hines icing for the sake of saving time but I think the next round will be with some icing made from scratch.

Here is the recipe that I use for my Zucchini Bread

3 eggs
1 c. vegetable oil
2 c. sugar
2 c. grated zucchini
2 tsp. vanilla
Chopped nuts (optional)
3 c. flour
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1/2 tsp. baking powder

  Preheat oven at 325 degrees.  Beat eggs until light.  Add oil, sugar, zucchini, vanilla, and nuts, if desired.  Combine flour, baking soda, salt, cinnamon, and baking powder.  Add egg mixture and mix until well blended.  Pour batter in loaf pans. Bake at 325 degrees for 1 hour.  Makes 3 loaves.

The cupcakes I did at 400 degrees for 20 minutes


I got 48 cupcakes and 1 very thick loaf from doubling this.

Psssssst um dude you just posted a recipe. Doesn't realy fit the instigator image. Now had you said your daughter tried to eat the whole thing but you stole it and ate it yourself then taunted her then that would counter the whole recipe posting thing. Kind of a run on sentence Snuggie will be upset with me. Does sound tasty though.

More to the point, what the flump are you doing making bread with courgette?

No never had Pumpkin bread, but that sound tastier then zucchini bread.

When I was a kid my step mom tried to get me to try spinach bread, didn't care for it.

Must be a geographical location thing ( note my location  :D ) Pa Dutch don cha noo.

My mother in law makes it all the time with cream cheese icing. Lets just say it doesnt last long.

For those that have never tried it, trust me its awesome. Dont picture cake with chunks of zucchini in it. Its similar to a carrot cake

I can't say that I would think that spinach bread would b nearly as good as zucchini bread would be but zucchini and pumpkins are both actually types of squash and are very similar.

Either way give it a shot I am sure you will love it. Zucchini bread has been one of those things that we always ate as a kid, as long as my mom was able to have a garden.

It probably is one of those geographical things but maybe we can get it to spread a little more. I didn't use carrot cake though because there are a few of my friends that don't like carrot cake (unbelievable I know) but do like zucchini bread.

I did try it now using some of my own-made icing this time and it is 10x better than with Duncan Hines junk.

sounds good...

i made the simplest thing the other night which was baked pears. It was 12 at night so i didnt actualy bake them but they tasted great.

1 large can of pears
4 oz cream cheese
honey

* Take canned pears, drain the joice (if you are going to use them all, otherwise just take the amount you need out of the joice)
* Since this was instant, i microwaved the CC for 30 secs or so to just soften it up so it can be mixed up.
* add desired amount of honey to CC. (I used probably 2-3 table spoons of honey) mix it well into the CC
* place two pears into a microwave safe bowl and nuke them for 45 secs to get them hot
* fill the gully of the pears with cream cheese mixture
* microwave again for 20-30 seconds and PRESTO Instant baked pears.

(microwave settings on mine were on the highest level)

By the way, does anyone know where they keep the toast in the supermarket?

I can't find it anywhere.

A loaf of Zucchini does not have a chance with me it will be gone in no time, pumpkin bread rates right along there to, both good stuff :aok  most people who eat Zucchini bread without know what it is cant beleive its made from Zucchini, its that good, Rats!!! wish i had some now  :lol
