No I agree with the distinction being made between hoing and jousting, but this would be nearly impossible to implement. If there were a way to adjust mid-air collisions it would become easier, but as far as I know it's only on or off. All I'm saying about turning collisions off would be that it would make it so that the ONLY damage done is a result of gunfire. This would make it unnecessary to draw that distinction, and a good pilot would be able to maneuver in a way that damage to his plane would be minimized, but still getting cockpit shots on the other plane.
If you wanted to make it like a joust.. with walls and each plane staying on each side of the wall, but shooting over it... well I don't know.. I think that's just going to be a big fail. If there were some way to build a semi-transparent wall that allowed rounds to travel through it, but not planes... then that would be ideal, but I don't believe this option exists.
