As near as I can tell, there are two kinds. Those who only use it's speed and fight from above, and those who can bend it like they shouldn't be able to. It's that last bunch that is fun to run into. When I compared Paeloguy to Agent360 it was for that reason. Both come in just looking for a fight and can really bend that 109K4. There are others who do that as well of course 
for sure I remember a few 109's I've fought in the past one guys name thats a very good pilot is Hartmann, he flys under the radar but a good 109 stick I remember a few fights I've had with him a while back
