You can use Fraps, Quobi, Guncam (no longer supported by the dev), or one of several other screen capture programs. I've found that to be the most practical way, as I've tried converting the AHF to AVI in the film viewer and it never works for me. And the AH film viewer AVI conversion doesn't capture sounds.
The easiest way to do it is to start up Fraps along with the Film Viewer. Run the AH film, and hit your recording key in Fraps. You can run the film in full-screen mode and that will get all the action with sound. If you're using the free version of Fraps, you'll only be able to record in 30 second bites with separations in between recordings. You're better off buying Fraps so that you won't have to worry about the limits.
In my case, I use Guncam to capture the film window in the AH film viewer. I first had to define that capture area in the Guncam settings (easy). Guncam can save directly to AVI or to its proprietary recording format. I use that, string the various parts together in Guncam's mini editor, and then export to AVI. (It's a shame that program isn't supported anymore; it had a lot of potential.)
From AVI format, you can use something like Format Factory, or Super to convert to another format. However, you might first want to string the AVIs together to edit them, add titles and music, etc., in something like Premier, Sony Vegas or MS Movie Maker before doing a final conversion. Every time you convert formats you lose quality in the film, because the process compresses the AVI, making it lossy and less and less sharp.
