Thanks but NC BBQ has WAY too much clove and brown sugar and its generally grilled or open pit. Visualize this as a difference:
Night before, rub ribs with Cajun Shake Dry Rib Rub...don't even try to argue one until you try this one...Cabellas and Bass Pro sells it.
St Louis cut ribs smoked with pecan wood for 2 hours at 225F with an apple juice moisture tray
At 2 hours, remove and wrap with foil AFTER adding a tablespoon of apple juice to the foil
For well done ribs with the fat completely rendered, add 3 more hours (don't worry about moistness, we take care of that below)
For a bit of fat, add 2 hours
Ok...here's the best part
With one hour left, take your fav BBQ sauce OR NOT and mix 1 part honey to 3 parts BBQ sauce and microwave for 2 mins full and stir
take the ribs off and baste with this concoction and then wrap in new foil and place the rib racks on top of each other in an empy igloo cooler for 45 mins (they'll be plenty hot)
For no sauce, grab your finest bottle of honey and hammer the ribs with the honey and continue with foil process above
After 45 mins has gone by in the cooler, cut and serve....or, grab each individual rib bone and twist it...it will come all the way out, bleached white and you can eat your ribs like a piece of pizza..
AWESOME AND UNCONTESTED!!BEST SMOKED CHICKEN IN THE WORLDCut a whole chicken in half (leg each half) and rub the tops with French's yellow mustard...place them bone down in your smoker and cook at 230 or so for 2 hours....I don't have an answer as to why you would rather eat this chicken than have sex...but you will. Do not feed your wives with this because they will want more chicken instead of you...but if you starve them, you might get both if your up to it.
