Here's a comprehensive introduction to offline missions for beginners:

http://techvideoreview.com/FlightSimMovies/AcesHigh/Ah2Missions/Ah2OfflineMissionsFullPage.htm

Lower down on that page, after the introduction, you'll find a list of 12 offline missions that are ready for your use. I recommend that you start with the first one, named "PeabodySimple", because it's the simplest of the bunch, and makes the fewest demands upon people that are new to this subject, and the fewest demands upon your computer. The page describing that mission also includes a pair of brief video clips showing how to download and use it. However, those video clips are rather "generic", and do NOT include all of the small details that differ with different versions of Aces High.

At the very bottom of each mission page, you will find a list of Aces High Versions for which the mission has been compiled. Click on the version that best matches what you are using, then follow the detailed instructions on that page for further instructions. Follow these details in preference to the generic guidance given in the video clip, if any differences are listed.

100Coogan has also written and published several missions, and he has published instructions for his own style here:
http://bbs.hitechcreations.com/smf/index.php/topic,319890.0.html

The first time you do this, you may need an hour or so to work carefully through the process, learning each step as you go. After that, it's trivial to install additional missions. I hope this helps!

Usually it's possible to enjoy offline missions that were written for previous versions of Aces High.  It depends on how much time and how many revisions intervene between the time the mission was written and the time your version of Aces High was published.

The best way to enjoy the big, complex, offline missions is to download old Aces High version 2.12.4, because the "bot" planes fly much better combat tactics. Every one of my missions is originally compiled and optimized for that version.

However, almost all of my missions were recompiled in November of 2011, using version 2.26.3, and I routinely use them with later versions of Aces High. The "bot" aircraft fly low, slow, lazy, uninspired tactics, but if you don't mind flying against that kind of relaxed opposition, the odds are very high that those versions will work for you. The computer and graphics card you use will also be a factor, since some of these missions are very complex and may demand more CPU or more memory than your hardware can deliver. The only way to know for sure is to try them. If I were you, I'd start with "Peabody Simple", using the version that is compiled for Aces High 2.26.3, and following the installation instructions that are associated with that edition. Follow the "AH2.26.3" link from this page:

http://techvideoreview.com/FlightSimMovies/AcesHigh/Ah2Missions/PeabodySimple/PeabodySimpleMissionPage01Full.htm

A couple of months ago, I compiled my "Shubin at Guadalcanal" mission for Aces High V2.27.2, and (since that version differs so little from the one you are currently using) it's EXTREMELY likely to work the same for you as it has for others using 2.27.2.

I hope this helps.

I'm in very much agreement with bbosen.  The AI have no heart.  That's one reason you'll notice that I build my
missions around water, or very flat terrain.  I fly every mission myself, just to choose a place that I hope that the AI planes
may not have too much of an of issue with the hills.  Even though all things being said and done, the AI do not engage with any
enthusiasm...
