I think the only reason we would ever need a functioning canopy would be if they animated the pilot bailing out sequence, where the canopy would fly off before bailing.The current instant bail that vomits out a plane in front of you is kinda lame to watch.+1
WWII U.S.N. protocol had open canopies for CV launch and recovery (at least at the beginning of the war). Not a necessity but a cool thing players might like for 6 months or so.

Yeah that wouldn't be bad either..but..seeing a dudes canopy come past your windscreen as the pilot climbs out would be way cooler then just the icon disappearing to symbolize its a dead target..
I don't think canopies on all aircraft shed off in WWII (though some obviously did - the 109 for instance).
Yeah, It would definitely add some fun to the bail sequence to where you don't just appear out of the aircraft, and you can see the pilot physically opening the canopy and jumping out of it.
There was no canopy jettison on the Hayate (Ki-84) you had to wind it back to bail out.
Still a marked improvement on the Ohka, which was fastened shut from the outside.
