It worked a bit differently from what you quote.
On enaging dive mode, the Stuka was trimmed for dive, radiator shutters closed etc., dive brakes out, elevator travel limited.
The alarm would just alert the pilot of the release altitude. He'd have to release the bomb manually.
On pressing bomb release, the Stuka automatically recovered by changing elevator trim again. This was not by auto pilot, but just preset trim that worked for any standard dive initiated with the system.
With a heavy pull on the stick, the pilot could override the system at any time.
