I dont find any usage for this one:

"DEFAULT ZOOM [SHIFT][Z] "

How it (should) work?

I am at home but i can't try it but as far as I know it's the "Default" Zoom setting. So if you have started to zoom in and out and moved around a bit it, the shift Z function sets it to the normal setting or the setting you get when you first get into the aircraft?

Your guess is correct. When you use the bracket keys to zoom in or out, pressing shift-z then resets the zoom back to normal levels...
