Boiled peanuts is a traditional Southern treat. Yankees don't go much for them because they're "soft and wet." But if you grew up in the South, boiled peanuts is natural as rain.
My recipe:
For 3 pounds of boiled peanuts, you need...
3 one pound bags of raw green jumbo Virginia peanuts. (Wal Mart peanuts are best)
One 3 quart Crock Pot and one 7 quart Crock Pot.
8 ounces Louisiana Cajun seasoning (powder.)
One 12 ounce can nacho sliced jalapeno peppers. (La Costena is what I use)

Divide proportionally between the two crock pots...
2 ounces Cajun seasoning and 4 ounces peppers with liquid, and 5 cups water for the small cooker.
6 ounces Cajun seasoning and remaining peppers with liquid, and 10 cups water for the larger cooker.

Small cooker takes 10 hours boiling time.
Large cooker takes 13 hours boiling time.

Use 1 quart Mason jars to can the peanuts. Makes about 6 to 7 jars.
