Will a mid range card eg Radeon 9600 Pro or Geforce FX 5600 ultra be much faster than my Geforce3 Ti500 on my 1800XP 512DDR rig? I have my doubts.

I have read that AH shows really blurry text when AA and AF are used on new cards?

Any opinion?

The blurry text is caused by AF (Anistrophic Filtering).  AA will not blur the text.

They will be faster, but not much faster.  What the newer cards will allow you to do though is make use of AA and AF without a prohibitive performance penalty.  A GeForce 3 Ti 500 is not a bad card, so it would be hard to justify spending $180 just to make games prettier IMO.
