from your post in the bacon thread, what is masa, is it similar to cornstarch?

sounds like a good chili, but I'm just gonna change a few things in it. use some crushed tomatoes, reduce the chili powder but add some hot peppers(habanaroes or similar, maybe even some thai peppers if I have enough antacid :D )

just more curious about the masa, sounds like some sort of corn floor or starch?

Masa is cornstarch, basically.  The Cajuns use sasaffrass root-file, and the Texicans use ground corn-masa.  The difference is that masa can be used as a solid filler, like in tamales, where file is just a thickener, like flour for yankee gravy or roux.

Masa Harina is a course cornmeal used in Mexican food to make tortillas, tamales etc. It's like Italian polenta and can be roasted to give it a deeper more nutty flavor, especially in a recipe like chili.

I gotta try this one!

Pork Loin with Beer Sauce

Fry 5-6 pieces of bacon in a pan, chop the bacon into small pieces.
Brown a pork loin in the bacon drippings
Sauté ¾ of a large onion and a bunch of leeks in the bacon drippings
Add corn starch and cream to leeks and onions along with the amount of cream necessary to make sauce. Add the bacon to the sauce. Bring to a boil to cook the corn starch and thicken.
Add a teaspoon of capers to the sauce and let simmer. Finish the sauce with ½ bottle of beer and simmer more.
Bake the loin in a 350 degree oven for 30-40 minutes until done.
Add some of the sauce over the loin and bake for an additional 10 minutes
Serve the loin and sauce separately

Chilli over rice hmm kinda sounds like a strange mixture. Coarse lots people put beans in their Chilli yuk. Any good Chilli uses Masa flour for thickning.
