"A veteran - whether active duty, retired, national guard or reserve - is someone who, at one point in his or her life, wrote a blank check made payable to "The United States of America," for an amount of "up to and including my life." That is honor, and there are way too many people in this country who no longer understand that."

I've never really liked that one, because it exclude quite a bit of people. Those who didn't fight and never planned to fight should still be considered Veterans, I think. Though my father flew Hueys and fits that description perfectly, my mother was a social worker and put up with all sorts of hell from people trying to dodge. She deserves recognition too, I think...and I've met a couple people that use quotes like that to say that her service doesn't include her as a veteran.
One of my favorite cam from Mark Priby, AKA Snail. As he was simulating a typical Warbirds Player.

The difference between a steel worker and my mother would be that she went through Basic and other training programs, had a serial number, and wore a US Army uniform. She worked on-base, just as "regulated" as anybody else. Sure, she wasn't put through hell and didn't necessarily risk her life for her country, but she wasn't allowed to back then either...so that point's a bit moot.
I personally think if you don the uniform, serve your country and its war effort, and are honorably discharged, you ought to be recognized as a Veteran. Your opinion, of course, is up to you.
I'm curious if there's a misunderstanding of terms here. She served in the U.S. Army as a social worker; one whose duty it was to deal with the psychological work involved with people who did things such as shot themselves in the foot to get out or became overly stressed. She served a term throughout the Vietnam War and was honorably discharged. I can't really give you an accurate figure as to how long she served, though. Both of my parents would rather forget it: father through trauma and mother angered at the way she experienced being looked down upon due to the thoughts on the war at the time. I do know it was certainly longer than 180 days, though. Very much so.
I know there's the definition by law, but there's plenty of combat veterans I've encountered that say calling her any kind of a veteran is a "disgrace" to them. They're just too macho about it; maybe they deserve to be, but I don't agree with them.
