Title: Quick and easy breakfast
Post by: Dichotomy on December 12, 2010, 12:45:02 PM
Nothing world changing or anything but the hungry monster hit me this am and I didn't want to do a full scale breakfast for one. So I fell back to my down and dirty way and thought you guys might find it useful

Items needed
Pam cooking spray or equivalent
1 small tupperware tin (think sandwich size)
1 coffee cup
1 spash of milk
2 large eggs
2 pcs toast
toaster
butter
jelly optional

oh and a microwave

lightly spray the tupperware tin with pam
break the eggs into the coffee cup splash milk in (here's where you can get creative.  I usually put bacon bits, a little pepper, or a bit of garlic salt in at this point. You can also use diced onions, peppers, whatever)
whip the egg and milk mixture thoroughly making sure the yolks are broken and it's well whipped
pour the egg mixture into the tupperware tin
place in microwave for one minute (or so depending if you like them a bit runny or solid)
toast the bread

when the bread pops out slap on some butter and jelly bust the eggs up so they're 'scrambled'

and viola a quick and easy breakfast

Variations.  The egg mixture will come out as a semi solid patty that you can slap bewteen the bread for an egg sandwich.  A couple slices of lunch meat is nom nom nom.

You can also use a small round tin to go on a bagel.  I do this at the office most mornings.  Slap a piece of cheese on and it's a good cheap breakfast.

The permutations are almost endless.

Once in a while we have a leftover baked potato or two.  I like to cube it and cook to brown a little like hashbrowns.  I usually saute a little onion and green pepper or whatever we have on hand.  Then crack a few eggs (half a dozen for 2-4 people) and scramble.  Almost when it all is cooked I add some cheese to melt in it and serve as quickly as possible.

Works very well with some kind of cubed ham, or crumbled bacon, or crumpled sausage.

when you try to mix it in the tupperware it tends to stick and the consistency isn't right.

You must be Pa Dutch, either that  or your being possesed by an old dutche...Doncha nooo ( my grandma would be proud of you sir ) lol I grew up on that, and still make it for my family now. ( I start with raw potatos though, they cook out perfectly tender w/o getting mushy.
Its a real "stick to the ribs" breakfast, guarenteed to keep you going all morning on the farm  :aok

That method works great except for me. After breakfast she tells me to clean up the mess.

One less thing to wash.

Being concerned with a quick and easy breakfast I figured you'd also be looking for a quick and easy cleanup.

I used to do this same thing back when I worked third shift. Eggs in a glass bowl, instant coffee with warm water, bread in toaster. It all comes together quick and easy. On days I wanted oatmeal I'd make that in a cup. That way it fits in the micro with everything else.
