Lots out there from us pilots, have not seen any german pilot books. Perhaps because most of their aces did not survive the war?

Gunther Rall a Memoir
Gunther Rall My Logbook

This one tells both sides of the story from German and US perspective. True story and may be the best book I've ever read.
"A Higher Call"

"A Higher Call"
A superb read - there are none better in my opinion.
Gunther Rall My Logbook
Good luck finding this one for under $600. I read excerpts online via the publisher's website a few years ago, but they've been removed.
I highly recommend "Messerschmitts over Sicily" by Johannes Steinhoff. He was the commander of Jg 77 in Sicily during the summer of 1943 and this book is revealing in showing the impossible situation the Luftwaffe found itself in. The biggest obstacle he faces was not the Allies, but the ineptitude of the High Command(I.E. Goering).

Luftwaffe Fighter Ace-Norbert Hanning
Luftwaffe Eagle: 206 Combat Victories in the Me 109 and Me 262-Walter Schuck

"Betrayed Skies" by Rudolf Braunburg. The author was a young 190 pilot who managed to survive being seriously wounded.
He clearly loved flying the 190A. Combat not so much. But it's a good view from a German pilot who wasn't an Ace.
I found my copy in a used book store many years ago now and I go back and re-read it fairly often.

"The First and the Last", by Galland
Although not itself written by German pilots, "JG26: Top Guns of the Luftwaffe", by Caldwell is a daily history of JG26 written from their records, personal diaries, and interviews with JG26 pilots.
-
The German Aces Speak by Colin Heath. Gallant, Falck, Neumann, and Krupinski interviewed.

Don't bother with No.4. unless you like reading 'tall tales'.
Interesting read on this Luftwaffe ace, http://www.wehrmacht-awards.com/forums/showthread.php?t=206588
