First of all, NO, youre not the only one finding this hard, not by a long shot! AH has a very steep leraning curve, its part of what makes this game so great. It has one of the most accurate flight models out there. I think it took me about a week to learn how to take off without harming myself..... lets not talk about LANDING

What kind of controller do you use? Mouse? Joystick? Which stick?
Is it set up and calibrated correctly?
For turning..... you do not need flaps in a turn (q key). they will only slow you down (read more about flaps
here).
In the turn: do not bank too hard (only about 45 degrees usually). Then use the elevator to keep the nose level. Practice this by keeping the gunner pipper on the horizon line while turning.
Also, you should know that AH requires you to use rudder for coordinated turning as it models adverse yaw. Read a good explanation
here My usual plane recommendation for starters is the Spitfire Mk9. Its not excellent in any category, but it does just about everything good. And it has a very forgiving handling. But the Hellcat isnt all too bad for starters either. Whats more important, is to stick with one plane for a while, until you are familiar with its strenghts, weaknesses, attitudes etc. At the beginning youll have a hard enough time adjusting to your own skills without haveing to adapt to a new plane constantly.
