I got educated on BBQ by a friend of mine who went to BBQ school and bought one of the mega-trailer pits (dang thing will smoke a half-hog). After going to the BBQ school a few times, he hooked up with the teachers and now helps teach the course and spends his time going to BBQ competitions (not bad for an ex-Navy cook). His pulled pig finished 2nd up here last summer (he got robbed - the other BBQ school had flygirls passin out free samples), and his brisket and chicken were top notch too.
I'm with you - Memphis BBQ #1. I know a couple of roadside stands near Knoxville that'll blow your socks off too though. Carolina BBQ isn't bad for a change of pace now and again if you can take the vinegar.
