Personaly I recommend using your trim keys and get either rudder peddals or a twisty stick if you don't already have them. Torque in Aces High playes a big part in the flight model and to some extent you can actualy stear the aircraft with it (if you loose all your control surfaces that is)
Personaly on take off, especily in torquey aircraft like the Spitfire and the Typhoon & Tempests are real bad too. Ya need to use some rudder to center yourself down the runway. In a "Tail Dragger" (aircraft that have a tail wheel) you may have a hard time seeing the runway su use the Page Up Key to bump up yer view a little bit.
On landing you will find that torque does play a roll as well so to get it perfect i find using Manual Trim works well. This gives you a nice slow aproach into the field and usualy let's you set down quite nicely!
My trim mapping settings are as follows!
Left Arrow Key= Trim Aileron Left (Roll)
Right Arrow Key= Trim Aileron Right (Roll)
Down Arrow Key= Trim Elivator Down (Dive)
Up Arrow Key= Trim Elivator Up (Climb)
(I am using a microsoft natural keyboard so)
Del= Left Rudder Trim
Insert= Right Rudder Trim
(Conventional Keyboard it would be Del & End)
Auto Trim should sort out your settings for you during general fighting but it's not brilliant at take off and landings so thats when you really need to concentrate!
Any help you need don't hesistate to email me any time.
