I'm not sure I agree with this. In the CT, at least, we generally salute people we shoot down, as well as those who shoot us down (guess which I get to do the most?). If someone gets offended by that, in my humble view, it's only because he is paranoid that people are making fun of him.

Oldman , you are by far the most polite and honorable in the CT, your salutes I regard with respect - they come win or lose.
But I am sometimes bemused by some folks version of saluting and I will quote an example from the CT ( but not the person)
I was flying around chatting on the radio and was hit completely by surprise and shot down - didn't move a muscle - the guy salutes me ( I think gee that's an odd salute - I didn't put up a whimper)
10 minutes later - the same guy comes in 2-2 , from alt , I manage to wound his friend and kill him in a fight that would have gone for about 5 minutes - it was actually a really fun fight . This time, complete radio silence at the end of the fight.
Seems saluting is pretty much for when you win the fight these days - not for a good fight
Personally , I'll salute if I lose a good fight , but never when I win one , seems a more logical way round.
EDIT - Oldman, 10 minutes later you and I had a great fight from 10k to the deck and the salutes exchanged were very genuine.
