Good point Wardog.
Stick scalings will depend a LOT on what plane you fly, what machine you use, what joystick etc.  Most importantly, it will depend on your personal preferences.
Take something like this as a starting point, but play around with it.  Try different things and test until you find something that helps you out.
For example, I actually use a really strange pitch curve.  Mine starts around 50% or a bit more, then goes DOWN in the mid range, and then scales back up at the end.  Why would I do this?  Simple.... it's in the middle where I need the help... that's where I tend to be with the stick when I am riding the stall horn.   

Play with the scalings, especially pitch, until you have an idea what works for you.  The beauty is that you can do this IN FLIGHT.  I recommend going offline and shooting drones.  Kill a couple and then adjust... lather rinse repeat.  Practice different types of shots, snapshots and G loaded tracking shots.  Also, don't be afraid to try BIG changes.  You can change it back easily, so experiment!
