Seeing as you said you were a bit confused on CT I'll start at the beginning.....
CT automatically trims your plane. As your speed increases it will continuously retrim the plane for you. This is were you can run into trouble. It also trims as you slow. One the planes that have a big problem is the P38. With the counter rotating props it is very easy to get that bird very slow at the top of a loop to sucker in a bad guy.
With CT on as you come over the top of your loops CT will try to trim your plane out, and you will basically get stuck in the air. So having a button on your stick can help avoid this type of trouble.
Most people I believe fly with CT on and don't mess with it. Some have it on and flip it off in fights to try and help like in the about story. Others have it off, and just flip it on for a second then back off. This "trims" your plane for the speed you run when you do it, in stead of going thru each trim control.
Then there are the hard core that never touch CT and do it all manually. These guys believe that trim really helps them in a fight, by giving them "that little extra something" to win the fight.
