Geese or Ducks would be nice, but I'm thinking that some pterodactyls might be keen on some of the maps--HT can use their discretion with that.

At the very least some swallows.

Of course, the damage model for impact must be tailored to the size and shape of the bird, and provisions must be made for multiple strikes if a plane hits a flock.

I'd like seagulls.I'd like many other birds in game, at least their sounds when your vehicles engine is turned off.
