Some small specialty stores in TX and Calif offer various types of game meat, either 100% or blended with beef. In Calif I think the most common is buffalo meat, usually cut with beef to make it taste a bit milder. I've had 100% buffalo burgers, beef+buffalo, and beef+moose, and they all taste good to me. But I think a lot of people associate strong meat flavors with spoilage or "animals", both of which are a total food turn-off for many (most?) city folk.
I think I'd have to get used to eating the stronger tasting meat if it was going to be a regular sort of thing, but for an occasional culinary experience I like them just fine. And I think that's why only the specialty stores sell that stuff.
I bet you can get it mail order, or just go in person to the local game butcher/dresser (whatever they call the guy who specializes in dressing/butchering game). Sometimes they have clients who just want the trophy, and sell the meat to a local butcher to offset the taxidermy expenses. Quality may be all over the place, but you have to become your own quality control after you get some experience.
