enchiladas

I love beef enchiladas, but its hard with my handicap and my parents age to get some made
at home. Do any of you know of good store bought kind, microwaveable or oven done.

I don't know if it's the same chain but I've had a Taptio's before and their food is fantastic!

These are ToGo locations, not sure if they deliver but if it's the same style chain than you will enjoy them.

enchiladas is some of the simplest food to make if you can fry an egg and boil water that's basically it.  it gets a bit more complicated if you want  to make your own sauce but other than that it is pretty simple.  you can buy the enchilada sauce at the store.  I prefer the red one.


1 grate cheese, i prefer real mexican cheese but choose whichever you want.
2 boil some water add whichever spices you want add the beef (not sure what they call it where you live but where i live it's called shredded beef).  once it is fully cooked it will shred easily.  make sure you cut it into about 1 to 2 inches long.  easier if you cut it first then shred it.

3 heat up the enchilada sauce in a pan make sure it is hot.
4 fry tortillas in vegetable oil, fry them more to warm them than to make them crispy then dip them into the enchilada sauce.
5 stuff tortillas with beef and cheese and rolled them up.
6 place the enchilada in a baking pan add more enchilada sauce on top and more cheese bake in the oven until the cheese melts about 10 minutes or so.
7 add more toppings if you want.  i like sauer cream
8 serve with rice, heck mexican rice-a-roni is pretty good here.

that's basically it.

i  live in Florida.  We make our own,  but for me its physicly impossible to do, and my parents getting 70ish
mess n clean up just makes it hard.

You've never had a decent one

Come over to my house sometime and I'll show you what a decent one tastes like. I've only been making em since I was 5 using a recipe my father got from a buddy when he was in the army.

Its alot of work. but well worth the effort. And the best thing is they taste great all night long. Often each hour on the hour (burrp)

Try adding a pinch of raw onion to each. Makes all the difference in the world. but just a bit. too much and it makes them taste bitter.
for cheese I like to use sharp cheddar. extra sharp if I can find it.

I fry my tortillas just enough so they become a little tough around the edges

Then add meat, onion (chopped) and grated cheese. Fold them over and nail em shut at the top with a toothpick.
coat bottom of pan with enchilada sauce. home made if you know how. or Old El Paso.
Line up the enchiladas in rows pour more sauce all over the top and top off with more cheese and any leftover meat and onion.
Stick in an oven at  preheated at 350 for about 15 min.

Best served with beer.

Oh BTW. Dont eath the toothpicks. Not bad tasting but can lead to some discomfort on exiting the body

you ever put onions on my enchiladas I'll shoot you  :D.  my mom used to put onions when we were kids and I hated it.  I never could eat onions on enchiladas as it gave me "ansias".  there's no word in english that accurately  describes what "ansias" means.  

I can eat onions on everything else but never on enchiladas.  btw you roll the tortillas not fold them, then again it's preference.

edit:  stay away from the frozen enchiladas found at the supermarket, they are really bad.  the easiest, cheapest way is to go to a Mexican restaurant and sample them until you find one that you like.  then keep going there.

Actually, decent is pretty subjective.  He asked for a frozen grocery store option and that was the best of the worst ;)
Grew up in SoCal with my hispanic cousins  :aok  Weened on great home made tamales and enchilada.

Love to take you up on that though, I'm a sucker for a really good enchilada plate.

I liked the one I got from Roberto's taco shop a few days ago.  Not frozen though.
Everyone I know, goes away, in the end.
