It's clear as a bell...unlearning 25 years of joystick and learning the new hand movements would drive me quite insane.

Nothing stopping you from continuing to use your stick.  That's my plan when the time comes.

The new system will even let you choose on the fly.

...or mix and match I assume?  Having trouble imagining the hand controls working better than physical controls and buttons.  Maybe if FPS were involved.  I just can't see hand controls beating pedals for rudder, for sure.

I as much as most appreciate new features and functionality. What I don't appreciate is the "automatic implementation" of these features.  Specifically, I found out about the new control modes in the middle of a bomb run, and it completely jacked up the run.  When I went into the gunner position , the bomber went into auto climb (not a good thing when a 262 is diving on you), somehow I switched fuel tanks and the engines died at the worst possible moment.  I tried to fix it in route, but when being attacked by 3 planes is not the time to be re-configuring your controls that haven't changed for many years. 

HTC, I support you, but this was poor implementation.  Should have remained like it was, then let us make the changes when we wanted to.

I was driving an M3 about to release the troops that won the war, but when I pressed the button all it did was eject the cassette from the 8-track player!   :D

it's not really for you. Imagine all those Steam VR players trying different games, they try AH and the first thing they find is they need to go buy a HOTAS setup just to properly try the game. Boom! Instant turnoff.

Now a Steam VR player can come into the game and use their VR controllers without having to fork out for an expensive HOTAS - until they get really hooked and decided they want to go the whole hog (or who knows maybe they'll stick with magic hands).

It's a great (genius) option to allow more new players to get into the game.

The  new control option may qualify as genius level in terms of getting new players in the game.
As far as the implementation.....I would say significantly below that point.   :huh
