Landing is easy after little practise.
Drop your flaps and hook if your plane has one and keep speed around 120mph.
Rise your head with PageUp key or put your head to the side of the canopy with cursor keys to have better view where you're going to. In some planes you just have to look where tower is and estimate where deck is from that.
btw ramp-strike hurts; be sure you have enough altitude to avoid that.
If you cant catch the wire but can stop the plane you're still able to roll backwards by giving engine little throttle to release brakes. I also drop flaps full down thought I'm not sure if it helps rolling back.
Also firing guns accelerates your backwards rolling thought if someone spawns in front of you something funny might happen ;)

Every plane in AH can land in CV thought I would suggest you to practise landing Me-262/Arado offline.

Taking off: If your plane is heavy, i.e. you have enough fuel to cruise to Paris or you have some iron under your wings you might want to use all the runway you can have. Reverse your plane to the end of the deck by giving engine little throttle. Then couple notches of flaps, full throttle and WEP on.
After you leave deck rise gears and let plane sink almost to the sea if you're heavy. Gain some speed, try to keep your feets dry and when speed rises enough (130-140mph) start gentle climb.

Download ThisFilm; Landings and take-offs with full loaded F4U-4. Extract zip-file to your ProgramFiles\HTC\Aces High\Films folder and see how it happens.
