If you want to go by SIDS and STARS etc., then go with VATSIM or the likes.
Nothing beats human ATC - other than always present AI ATC

("Where the hell are all ATC's!?" you might ask when online)
Never used FS2002, but Ive read they did adjust the flight models somewhat for the default planes.

It is possible to pan AND move the viewpoint in the cockpit.
You should be able to find most of these commands from the view key assignments section.
I don't remember what pans the view, since I use the joysticks hats to pan and zoom.
However I do remember how to move the viewpoint.. but not exactly which combinations did what, except that those were connected to moving the viewpoint...
which are the following keys:
All the combinations of ctrl,shift and either enter or backspace.
shift/ctrl keys toggles the function for moving the viewpoint around.
theres three combinations: ctrl+shift+enter/backspace, shift+enter/backspace and ctrl+enter/backspace.
enter / backspace toggles the direction of movement.
I don't remember which combinations movedwhich way, but it's all those general directions: up/down, left/right, forward/backward.
You can define the default viewpoint location from the airplane cfg file.

needs some testing to get it right if you want to change the default viewpoint
