Please don't take this personally, but ARE YOU FREAKIN NUTS? Those are Capitol Offenses in the Republic of Texas.

Curval, it would be very difficult to duplicate Texas BBQ in Bermuda. Simply sending the ingredients for the rub and sauce would not work...unless Bermuda has native Mesquite trees. One of the biggest factors in making Texas BBQ is fresh cut green mesquite wood added to the firebox of the smoker.

Well, there ya go Curval!

I knew if I tossed some gasoline and match a Texan or two would catch fire.

Texas does have some good BBQ and a lot of variety; been there, eaten there, enjoyed it much. For example, you'd never find BBQ cabrito in KC, but done right it is simply excellent. (OTOH many Texans think beef is the ONLY meat, thus passing up pork Baby Back ribs; that right there is proof of insanity! ;))

Still, I'll stand by KC as THE pinnacle of BBQ greatness.



Now, I'm off to FedEx with yer goodies.

Some of the best barbeque I've EVER had was from Texas.  Place called Cattleman's about 40 miles east of El Paso.



I would go to El Paso just to be able to go to Cattlemans.

Actually the issue of additives into the smoker has been raised and a list of them provided...even ranked as to the type of flavour produced and difficulty in obtaining.

These guys are looking after me.  They are not messing about.  There like...a...ummm....rhinoceros dude, and you don't wanna mess with a rhinoceros...he'll frigging charge your ***.

Had ribs at the Rendezvous and at Corky's in Memphis. Supposed to be the "good" spots, I think.

Rendezvous tasted like they used Shake and Bake BBQ coating. Blech.

Corky's was better by far than Rendezvous, but probably wouldn't place in the top five in KC... maybe not in the top ten.

Up here, the "competition crowd" don't give out their recipes. But they're the folks that travel all summer going to BBQ cook offs. They have a reason to hold the cards close.

The "everyday" BBQ folks... your neighbors and people you meet tailgating at a Chief's game... will almost always tell you how they did it, sometimes in painful detail ;), so that you can make it yourself. And I'll tell ya, the average smokers up here make some fine, fine bbq.

Must be different in Texas though.

The state of misery,
  I lived in KC for 8 or 9 years and hated most of it (mostly the 4 seasons- too damn cold, too damn wet, too damn hot, and too damn windy).  That and they haven’t learned the west coast trick of keeping your snow on the mountain and visiting it when your schedule allows,  they drop it all over town and drive through it.

As much as I hated living there, they still have a couple things perfected

1. BBQ

2. Anything made with beef,  KC has the best beef , the only thing that even comes close is Omaha, I’ve been living on west coast beef for 16 yr. and I can tell you it sux.

3. Just about any kind of cooking,  the best meals I’ve ever eaten have either been made in Missouri or made by someone from Missouri (the wife)

4. Service in a restaurant,  when you go to a restaurant there you are treated to fast quality service, smiling faces and good food, reasonably priced.  compared to Oregon where you’ll pay twice as much for food half as good, brought to your table by a girl that is pissed that she had to get off the phone to serve you, after letting your food sit in the window for 20 minutes.


Their only failing, food wise is Asian food-  Chinese, Japanese, Thai, Mongolian,  9 years and I never found one that didn’t taste like it came from the stir-fry mix in the frozen food section.

I’ve had Texas BBQ quite a few times, and it’s pretty damn good, better than all but one restaurant we have around here, but it’s no-where near as good as KC, I can beat Texas BBQ in the smoker out back.

btw- curval, nice set up for some getting yourself some free BBQ, WTG,  :D

Things have changed a bit in the last 8-9 years. The Asian food department is picking up. There's very good Mongolian about 2 miles from this computer, two or three good Japanese teppan/sushi places within 5, many good Chinese restaurants all over the place but I haven't found a really good Thai place yet.

Mexican fare has also picked up, especially in the Southwest Blvd area. It was poor for quite a while but we've had an influx of "guest" workers and it's really improved.

And the bird hunting in Kansas usually ranks in the top three in the nation.

So....... suits me.  :D

Rudy's BBQ

This one is great for Pork Chops, the ones they serve are 3-4 inches thick.  You just point out what hunk of beef you want from the huge pits as you enter.

Coopers BBQ


Those are the 3 best in Central Texas, Bar none(Well, Hot guts from Elgin are good, too, but their other BBQ is only so-so).


Now I've lived in Texas, Austin specific.....Rudy's was my hangout for good BBQ....really the only place I ate at which even came close to KC quality and taste.

Still, it lacked the flavor and substance of KC style BBQ...I think the most fair assessment is that Texas BBQ is not better or worse, just different.

I do miss Rudy's tho....an old Gas station coverted to a BBQ joint and yes, you can still fill her up...the pumps work:)
