Title: The American Cheese
Post by: Darkish on August 25, 2008, 10:31:13 PM
Amongst the countries of Europe, there is considerable pride devoted to a hardned, slighty out of date dairy product.

The English have there Cheddar, the French - a Roquefort or perhaps a Camembert, (my favorite Oussat Iraty, not a dairy but a sheep's cheese), the germans have there Cambonzola, Itaians with a lovely Gorgonzola...

Apart from the plastic stuff, how has the USA enhanced the world of cheese?

Apart from the plastic stuff, how has the USA enhanced the world of cheese?

By covering it in batter and giving it a bath in boiling hot oil.

We have this place called Wisconsin (you may have heard of Oshkosh?). In Wisconsin they make cheese that makes EuroCheese taste like donkey poo.

Yep, dairies in Tillamook Oregon, make awesome Extra Sharp Cheddar.... Pretty cool place too...
The town has an old WWII era Blimp hangar, (held 4 blimps), that is full of WWII airplanes...
They say the blimp hangar is the largest freespan all wooden structure in the world.... Its HUGE!!!
And of course the planes are awesome... A26, B25H, Mustang, Corsair, Hellcat, tons of others...
Also, it is a Salmon and Steelhead fishing mecca.. Three rivers, Wilson, Trask, and Kilchits, empty
into Tillamook bay... Some of the largest King Salmon in the lower 48... 40lb'ers are common on the Kilchits...
And sometimes ppl land the occasional 50+ lb'er.... Awesome town, to say the least!!!

When I was there for last years steelhead run, they had a Super Guppy at the blimp hangar,
piston engined too... unusual!!!

Yep, they've got a hanger in Tillamook big enough to fly a T-6 through.

And on the topic of cheese-  The US has really come a long way in their artisan cheesemaking. On a larger scale, Maytag blue is one of my favorites as well.

If you are ever in Geneva there is a small Raclette restaurant that serves very simple dinners...essentially blobs of cheese with small potatoes and some pickles and onions.

Absolutely delicious.
But, do not do what I did and have a whole bunch of it and then drink a cold coke.  You won't be able to poo for weeks.

Lately I can't stand the "Pasteurized American Cheese Product."  But I have been making grilled cheeses out of cheddar.

Want to buy some 'cheese' off me?  Comes in a roll and is wafer thin, will do you a special offer just for you, 2 for the price of 3.  Take my word for it - it tastes great!
