i sit here right now, Enjoying one of the best bowls of chili ive ever tasted. made by mother. It contains deer meat. and its delicious.
Enjoying it tho, it makes me wonder. Why do supermarkets not sell deer meat? and why do we not farm deers, as we do cattle?
Im not familier with hunting laws, so forgive me if that counts into it. My only explination is that Deers are a huge food source for many other animals.

because most people dont like the smell and taste of it. and they are not sure how to prepare it. same reason why in many cities it is hard to find anything other than beef or pork.
I made some really good deer meat at my house once, fricking dog went wild barking when she smelled it and my gf left the house because she couldnt stand the smell of it. I told her she had put worst things in her mouth but she wont let me make it again.
funny thing is I have made cow tongue, heart and other specialty cuts that she doesnt know what she was eating and she loved them. as long as she doesnt know what she's eating. but if you ask her if she would eat heart or tongue she says hell no it's the most disgusting things in the world.
guess what you dont know wont hurt you :uhoh?

thats a shame. this is by far the best chili ive ever had. my mothers bf hunts, and he makes great peppered deer jerky.
In my town, people go nuts during hunting season, ether hunting themselves, or trying to find someone willing to hunt for them. Just seems if someone started selling deer meat here, they could making a killing.

Deer is simply harder to farm, cattle are more domesticated (docile).
In NZ we do have deer farms, and we can buy venison in the supermarket. Though it's generally red deer. Most of our venison gets exported though.
Fallow Deer meat is the best meat I've ever tasted, it's sweetish, very light and tender, and has no fat. It makes even the best beef look like 3 week old roadkill. But it's very difficult to farm, and a smallish animal compared to red deer. Occasionally I get to hunt a couple of area's that carry fallow, last time I brought back 3 beasties.
Here's one about to get chopped up with my hungry little carnivores waiting:
Believe it or not my wife does all the butchering, we get every little piece as we have a mincer. Of the last 3 I brought back we got around 16kg's of prime venison mince from offcuts which made delicious burger patties.
In NZ deer is considered a pest (introduced species), hunting is all year around and free :)
While we're talking meat, we also eat hare meat (aka Jack Rabbit in the USA), rabbit, and feral goat (the young nannies). All are excellent and healthy meats commonly overlooked. I took my eldest (nearly 7 now) hunting and shot a hare just last night.
One of these guys...
They have very long back steaks which are great for frying, and lots of meat on the hind legs. Once again the meat is a lean red meat, and the female of the species tastes best :D . Sometimes I'll roast them - rest of the time they go into the mincer (great for pasta's). A typical hare will give around 2.5pounds of healthy lean mince.

Deers are agile and fast.
Cows are not.
-
Awesome vulcan, wish I could come hunting with ya over there!!
Oh and thanks for posting the pic of the NZ hare.
As a dumb American, all my life I thought rabbits looked like this..........

"Yuck, I wouldn't eat anything that's been in some animal's mouth!" How about some eggs, then... :x

I love taking deer steaks and country fryin em. Serve them up with some rice and gravy and some mashed taters. Now that is good eatin right there.
-
The biggest problem with deer is the lack of the beast being bled properly. Or worse yet, serving deer that was killed by an automobile.
If the meat is fresh and properly bled, it tends to be rather tasty.
-
because deer are not domesticated in the US really. Do you have any idea how high a deer rancher would need to build their fences?
-
Crud..... 10:47 and now I'm already hungry.

I know here in Ohio deer are farmed. I remember reading an article about a buck used for breeding (stud, bull, etc.) escaping a fenced area. That sucker was worth (memory not so good anymore) maybe upwards of a few hundred thousand to $1mil.
-
Deer can and are "farmed" in the states. However most of the money is not in the meat, but to produce products for the hunting market. Elk and Bison are also raised now. In specialty markets they should be able to get or have venison / elk / bison.
-
I believe there may be some laws that govern the farming of indigenous species also...we have deer here that are farmed but they are red deer.

Just had the last bowl of that chili. Man is that stuff good. Love the way it warms the belly :lol
Is there any place online where you can actually order venison? If i could afford it, I'd much rather be grilling deer steaks than cow. I live in ohio.
:salute

I don't hunt, but I do eat deer quite a bit for not being a hunter.. I love all game and will try anything multiple times until I like it(kinda force myself to like it)..
Here in Indiana, we have lots of soy.. I notice that deer that primarily eat soy taste horrible(irony, gamey), but deer that graze naturally on stuff other than soy taste pretty much like beef(in my opinion)..
-
I like to eat beaver.
Seriously, don't knock it till you tried it.

:aok so true

Here's the thing.
Straps, roasts and steaks from any large game is good. I enjoy straps from a younger animal myself.
If you want to make a good sausage (Italian, breakfast, etc.) or snack stick, you have to mix pork in during the grinding process.
I like a 50/50 ratio.
Jerky in the oven (120 deg) is fine, but for my money, the jerky guns are very nice. Then stick it in the dehydrator.

i just shot two deer this week. got 56 lbs of ground deer out of them. ill post pics later. (8 point bucks) :rock

There is an Elk ranch or farm near here. He's had a few hillbilly's stop and take shots at them. Also, I like Bison, but around 2 years ago, it was under $5 a pound. Now that Walmart sell's the meat, it's around $9 a pound.
Edit.
The guy that sells the bison is about an hour South of me. 30 minutes North, we have about 2,500 bison on the tallgrass prairie. http://www.nature.org/ourinitiatives/regions/northamerica/unitedstates/oklahoma/index.htm

Elk, I knew someone that lived in the Colorado Rockies. Swiss Elk Steak. One of the best thing i've ever tasted. Just cook it 1.5x longer than beef.

Some small specialty stores in TX and Calif offer various types of game meat, either 100% or blended with beef. In Calif I think the most common is buffalo meat, usually cut with beef to make it taste a bit milder. I've had 100% buffalo burgers, beef+buffalo, and beef+moose, and they all taste good to me. But I think a lot of people associate strong meat flavors with spoilage or "animals", both of which are a total food turn-off for many (most?) city folk.
I think I'd have to get used to eating the stronger tasting meat if it was going to be a regular sort of thing, but for an occasional culinary experience I like them just fine. And I think that's why only the specialty stores sell that stuff.
I bet you can get it mail order, or just go in person to the local game butcher/dresser (whatever they call the guy who specializes in dressing/butchering game). Sometimes they have clients who just want the trophy, and sell the meat to a local butcher to offset the taxidermy expenses. Quality may be all over the place, but you have to become your own quality control after you get some experience.

Bravo Sir... bravo.
I placed that one right up on the tee for ya and you backed away. Excellent restraint by the community thus far.

OK, I'm having elk steak tonight!!
Here is the elk from this year. He was a small guy but the best to eat. You get about 250 pounds of meat off the little ones like this.

I'll bite. Take extra care when skinning beavers, picking hairs out of your teeth after eating a badly skinned beaver is the worst.

Yup nice bucks 1sum

How much do you want for that shirt???

"Yuck, I wouldn't eat anything that's been in some animal's mouth!" How about some eggs, then... :x
that tells you how dorky we humans are.
I make some really good salsa, spicy hot and tasty, they way it should be. once she asked me to make her some for a potluck at work, she wanted some really hot and some mild. I made a big batch of really nice firehot tasty salsa, it was awesome, best i ever made. she loved it then ask me to let her try the mild one. I had forgotten to make the mild sauce as I dont really do mild salsa :rofl :rofl. anyway since there was no time to make more, i just put the same batch in two containers and labeled one hot the other mild.
it was funny as hell when she came back and brought back nearly all the "hot" salsa as people said it was waaay too hot, but they ate all of the "mild" salsa. they said was hot but not too hot and very tasty. ah the power of suggestion :rofl :rofl :rofl.

I have some venison steaks in my freezer compliments of a customer.
As someone else mentioned. when properly prepped there is no gamey taste or smell that I can notice.
In fact last year I cooked up some and went to my daughter and told her "I tried making steak a little differently I want to know what you think."
She tasted it gave me a thumbs up sighn then said. "Its good but it just tastes like steak to me"
So I gave her another piece. Halfway through chewing she noticed how I was looking at her and said "what"
I told her it was venison at which point she spat it out and proceeded to try and beat the crap out of me. LMAO
Funny thing is she loves Buffalo meat but she wont eat deer..Because its a deer
-
Deer is amazing. I have never prepared it, but the countless times I've eaten it in many different forms (thrown right on grill with no seasonings, wrapped in bacon, marinated in different sauces, etc.) it has yet to fail me on taste. and the smell is amazing.
I havent read the whole thread, but I wouldn't be surprised if because it is typically a game animal and is shot/hunted for sport (but not abused as there are laws to avoid poaching and the sorts) that the government does not want to /feel a need to have it farmed.
