Lazys1: It's a bit of fun. There was little chance someone was going to get it, anyway, even though I've already given away 2 clues. Anyway, christmas should be a time of giving, ya scrooge! I bet you're a hunchback, have a long unkempt beard and children throw stones at you. Dogs chase you to urinate on your legs and a constant stench follows you everywhere you go.

Fine, I will.

As I said, each clue line had 2 or 3 things connected with whatever "I was". I also said there were some puns in the clues aswell. Most of the answers people gave were good and could have fitted to the clues, but only once for each clue line and some were pretty vague in certain points.

Ok, here is the riddle broken down:

I have 4 legs in the morning, 3 legs by midday.

The cow wakes up in the morning with 4 legs. Animals, including cows, are taken to the abattoir in the mornings. Cows are usually divided into 4 portions including the legs which are seperated (so there you have the 3 legs). Midday is associated with lunchtime, usually. I can count 4 clues just in this line.

I'm good on the side but covered even better.

Beef, which comes from a cow, is typically served on the side with potatoes or salad. Beef on its own is nice, but covered in gravy is even better. You will note that beef is the only meat which is traditionally covered with a sauce, so it couldn't be a sheep, because lamb is usually served with mint sauce on the side. Same with pork which is served with apple sauce on the side. Also, the puns I was talking about appear in this line. In the clue it says I'm good on the side ok, think Silverside and Topside of beef. etc.
Here there are 3 clues.

A bit of me will satisfy you and three friends.

Beef joints are usually sold to serve 4 people (something to do with cooking times, etc.) Only 1 clue here. This is probably the most misleading line.

You can do me many ways, I don't mind.

You can do beef grilled, fried, brased, poached, baked, dried, cured, salted etc. Another clue was ..I don't mind. He wont mind because he's dead. 2 clues here.

You can wear me out anyday of the week.

You can wear a leather jacket, trousers, skirt etc out, as in outside. Or, you can wear a leather seat, like a car seat, out over time. Two meanings here. Also, you can wear it out(side) anyday of the week, because leather is considered both a casual and a smart dress and both a summer and winter clothing.
I count 3 clues here.
