I agree, even with WWI planes the majority would HO or run like they do now, or try to. But even in those WWI crates turn fights would ultimatly rule. Aircraft design would be the limiter.
Late WWII war planes tend to reflect, encourage, compliment and exaggerate the normal human nature of most people manning the cockpits.

Shoot first and run. Aricraft design here is the enabler of human nature.
Early war planes seem to have an affect on this human tendancy. They don't RunStang away as easily, so inadvertantly everyone winds up at ground level to 5k up from ground turn fighting. Again aircraft design.
If you have one maybe two days a month with an early war plane set, chances are it would be the old hands who would know how to use the 1940-41 era planes strengths. The rest of the Hoard would be the entertainment.
