Spicy smoked sausage with horse meat is called a "salami".

Ever noticed that good salami is red? It's because of horse meat.


There are some nations, nomads, like Kazakhs or Mongols who eat horse meat just like any other.

What follows below is supposed to be a joke:

Two ogres meet, one carries a bag with something moving inside. "What's in there?" - "Look, I carry wolves to the river to sink" - "Wolves? They are human, Kazakhs!" - "Humans my ass! Five of them just ate a horse!"

Its rare here too, but there are ranches that raise them for slaughter.   I understand the meat is healthier than beef, and it does taste delicious.   I tried a sample at the grovery store once.

Salami does not contain horse meat, according to its definition on foodnetwork's encyclopedia, boroda.   I would think the manufacturer would have to label it - I'll look next time I'm in a meat department.

Many years ago horse meat was available in the store, raw for those who made their own dog food. A neighbor used to cook it for her dog. Occasionally she had some herself. Once I got to try some roast. Not bad but a bit stringy. Lighter flavor than beef but not unpleasant at all.

I'v eaten buffalo (American Bison) several times. It can be dry but tastes very much like beef. Made into sausage it's very very good.

The buffalo steak I had was grilled and seasoned with salt and pepper, and very tasty - much like beef.

You know somewhere I grew up with the idea it was morally wrong to eat horse or dog.    But growing up in the farm belt, beef, pork and chicken were all plentiful.

I remember back in the early 70's, there was a beef boycott going on, and a lot of people were trying horse meat as an alternative.
My mom bought several pounds of horseburger, and made patties out of it - IIRC tasted different than beef but not bad.  I think she was joking about it not being horsemeat - but "chevelle"(?).  Supposed to be the French word for horse or something.
Actually, I prefer Spotted Owl meat over horsemeat.....

Not too sure about the Kazakhs, but I don't think the Mongols really eat their horses much — partly because they're more useful alive: they're transport first and foremost. I'm sure they'll eat it on occasion, but it's mostly goats, sheep and cattle on the meat menu.

They do however drink their milk, and ferment it til it's alcoholic and drink that and use that to produce a spirit too. So again, a live female horse is more useful than the meat. In fact they drink and use the milk of all of "the five animals": horse, camel, cattle, goats & sheep.

I do know this, though: those Kazakh buggers put salt in their tea. A very nasty surprise of a morning, a big warm bowl of milky tea that turns out to have salt instead of sugar in it.
